Incomplete, but I know it can be a hassle to control the pet - here's what I've found out. All this was tested only with a melandru's stalker - later tomorrow I want to try it with the other pets to see if they act the same.
It will attack...
... when you successfully execute a "do it" on a target.
... when you order a do it while using one skill and then use another skill - this may seem irrelevant, but to a caster it means that they don't have to stop for a grunt attack to let their pet hit
It will not automatically attack...
... when being hit.
... when you are being hit.
... when you use an aggressive spell on a foe.
It will disengage from combat ...
... when you walk backwards far enough.
... when you walk backwards a few steps and then towards it.
It will not disengage from combat...
... when you start attacking.
... immediately when you choose a new target.
You can still pull with a pet by ...
... using an attack spell.
... using the monster's aggro radius.
... using a grunt attack and VERY quickly walking backwards - you have to be walking backwards before it arrives I think, but I'm not sure. A flatbow is probably most suited to this.
There is no run control for it, unlike henchies. :'(
The pet may randomly reengage based on your walking/positioning and whether or not you're taking damage once it's had one "do it" and was disengaged. Well, not randomly, but I don't understand how it works yet.
