I can see some storyline elements for certain race/class combos. Maybe not specific combos, but like a different quest for charr casters vs physicals, a different quest for asura intellectuals vs brute force, etc.

Oh, I'm excited to see my Sylvari Engineer, Asura warrior and Charr thief. If Mesmer is an option, I may go with Norn thief and Charr mesmer.
I like the idea of playing characters in this lore-world that would have the quirk factor.
Norn Warrior
Asura Guardian
Charr Engineer
Human Thief/Ranger
Sylvari Necromancer/Ele
Mystery Profession: Norn or Charr I think
Just did some intense wiki-looking-at, and now I'm more torn than ever. I really want to roll a ranger first, but looking at the skills, they really don't have anything that appeals to me other than longbow/shortbow skills. I've also looked at Ele, Guardian, Thief, and Necro skills, and based off of those, I think my order has changed (at least until we get news about changes to Rangers).
1. Norn/Sylvari Guardian (Reason: I love the amount of locational support they offer with wards, etc.)
2. Sylvari Elementalist (Reason: I never realized just how versatile Elementalists are, 5 skills for staff per element = 20 different skills; great support; I like Water Element the best)
3. Sylvari/Norn/Human Thief (Reason: Stealth mechanic; possibly a WvWvW only character? I like the idea of living in WvWvW, lol)
4. Sylvari Necro (Reason: Minions, wells/marks)
5. Sylvari/Norn Ranger (Reason: Lack of good skills is why this is 5th)
6. Non-Asura Engineer
7. Norn Warrior
I realized that Norn spirit animal transfigurations aren't as awesome as I thought (for some reason I was thinking Druid from WoW, it's more like different colored werewolves).
It's really cool that ANet has made the classes so awesome that I can't decide between my top 4-5 which to play first. It constantly changes...driving me insane..

The Ele really acquired this versatility with the latest demo at Gamescon & PAX. The earlier versions hat much more direct damage skills without any boons & conditions. Now the Ele is in line with the other professions (which means pretty much every skill except the slot 1 skill offers some sort of additional effect to the base damage).

Ok, so I made up my mind, and I've come up with my profession order (subject to change based on Ranger changes):
1. Sylvari Elementalist + Human Thief for WvWvW (Simultaneous)
2. Sylvari Guardian
3. Asura Necro
4. Norn Ranger
5. Charr Engineer
I think.
Crafting Professions:
Elementalist - Artificer/Tailor
Guardian - Weaponsmith/Armorsmith
Necro - Jewelcrafter/Cook
Ranger - Huntsman/Leatherworker

Slight change in the lineup shown above:
Human -- Elementalist
Human -- Ranger
Sylvari -- Guardian
Asura -- Engineer
Three humans really was too much, and I've decided that one of my GW1 characters can come back as a sylvari instead, though the name may require some spelling modifications to make it more racially appropriate. Also, even as an altaholic, four characters may be as much as I can handle for a while without seriously neglecting any of them, and it's enough to handle all the crafting professions. Eventually they'll all be advanced enough that I'll get a little jaded, then I can start experimenting with other races, professions, and biographical choices.
This seems like a good place to start of on these forums :)
I generally play Large, Heavily-armored, Melee characters, so my first roll will most likely be a...
Norn Warrior
Followed by, in no particular order:
Charr Thief
Human Guardian
Sylvari Engineer (Salad with a Flamethrower! This one will probably inspire some sort of fan fiction to explore the character)
and if the final profession turns out to be what most people are hoping for:
Asura Mesmer
