I'm definitely rolling an Engineer. As far race, I'm torn between Human, Asura, and Sylvari. Human only because I kinda want to make me.

So, after what I've played of the beta, I've decided Norn Warrior as a main/first char, followed up by a Human Necro a few weeks/months after (although I'll probably make it straight off the bat in case of b-day presents etc).
edit: hm, actually, maybe human warr. Depends.

I'll need to research the professions a bit more before I pick. So far I liked the combat of the guardian and mesmer most, with necro optional skills being the best. I like the idea of versatility of elementalist and engineer but I might be too lazy and pick something simpler to play initially at least. Seems to me that swapping between kits and elements expertly is something that requires memorization, and I would rather my first play through to be more straightforward. Ranger is still bottom of the list.

Human warrior, human necro first, no question.
I have come to like the guardian and engineer as well. This evening I spent a fair bit of time with the elementalist too, and there's fun to be had there.
I enjoy mismatches -- the tiniest race available being a front line fighter (a gnome warrior in Warcraft, for instance). So I may keep my current combination of Asura and guardian. I did play thief for a bit, didn't like it much. Played ranger for a bit and didn't like that either -- though admittedly it was in the Norn area, and I can't say I'm enamored with the Norn in general. Tomorrow I'll probably make a mesmer, since I've heard that it's a fun class. But I may need to try ranger in a non-Norn area.
Sorry, it's late. Way past the time I should have gone to bed. The non blathery response: Human warrior and necro first. Probably Asura guardian. Last two slots are probably going to be engineer (race undecided), and a toss up between Sylvari elementalist and mesmer.

Lady, I assume you played ranged... what did you love in it? I simply have not played it enough to know what it's like to play ranger...

I played ranged and two-handed. First and foremost, I just love to play with a companion. Be it a pet or a familiar, any companion will work. Beside that, I like the ranger as I find it a good mix between ranged and melee. It's all I thought the GW1 Ra/W would be when I created Rhonwyn. Proficient with both sword and bow.

I made a Thief last night. I hated it at first, but once I got a gun, I started to really enjoy it. I almost never use the F1 skill, but the skills alone kind of remind me of playing Mesmer in GW 1. You get a skill that causes a specific condition right away (Bleeding [Degen], Daze, Blind). Definitely going to be making a Human Thief in release. Remains to be seen if he'll be #3 or #4 (Mes will prob be #5, made just for nostalgia).
Eventually I'll buy a character slot to make a Charr something. I didn't think I'd play one, but their culture is actually pretty interesting. And I kind of like Dinky hehe Maybe an Engineer, since it's sort of fun.

Thief is definitely the adventurer version of mesmer. Glad you liked that one!
As for ranger, sounds fun, I like being able to swap melee to ranged but so many can do that. I also like summons or familiars or pets, but again, especially with CE and racial skills, so many can do that. So I think for my main I'll stick with another profession. Not sure which yet.

Ranger is a crapload of fun. Definitely going to be splitting my time between that and Warrior (and Thief and Ele!). I tried sword with hatchet offhand today on Ranger.. How great. Start with Serpent's Bite, roll away with Hornet's Sting, do some ranged damage with Path of Scars, then jump back in with Monarch's Leap.
