Well, you need 4 characters to cover all crafts. But if you have less, you can always level more than 1 craft.
The obvious list isn't so obvious though. One thing, you have 3 listed per profession. Another, I would emphasize weapons and armors over cooking and jewelry. Those crafts that can only build for certain professions are likely to have nice stuff to craft to compensate for reduced amount of potential buyers.

I had planned five characters from the beginning, with the first three being ele, ranger, and guardian. Since that gives me one character in each armor class, it just seems obvious to give each of those three the matching armor crafting profession. Likewise, I can give each one the most relevant weapon crafting profession, so the needs of all characters are covered. I can assign jeweler and cook to my fourth character, or split them between the fourth and fifth.
I don't see much need to have multiple characters with the same crafting profession. Unless, of course, ANet decides to throw in race-specific crafting recipes, or recipes that produce a different result depending on the race of the crafter. That might make things ... interesting.![]()

I will try to cover all the crafting professions, but i still want every character to feel complete and functional, so i will pick those professions that i feel the character/race/profession combination 'asks' for, if this means I will end up with double crafting professions, then so be it :)
Most likely I'll be picking up crafts that'll supply armor and weapons specific to my characters. My top three professions at the moment are Guardian, Mesmer and Elementalist. I am definitely going to be focusing on leveling them consistently so I'm going to have one tailor, one weaponsmith, one jeweler, and most likely an Artificer. Depending on how much often I use certain weapons, I may just purchase the rest or look for drops.
If the cook craft includes alcoholic beverages of any kind then i will be focusing on that at first.
I have a reputation to uphold after being known by my alliance as drunkie for many many years.
But i will probably cover off all the crafts over my various characters.

I would probably mix the craft professions across my two mains; eventually focusing on the crafting that earns me the most at market (besides getting stuff for my peeps on the side with other professions when needed).

Cooking is considered our advanced craft. It will cost you more money, karma, and time traveling the world than any other crafting discipline. Pro Tip: Every cooking recipe in Guild Wars 2 is a real recipe for real food in real life (or a basic approximation). If you think you are close to figuring out one of the combinations, google a recipe for the food you suspect it might be, and odds are, you can find a bunch of recipes for things like that to try out.

...doh. It wasn't until reading this thread that I realized I could have picked an extra crafting skill. Oh, well. Now I know.
