You can change your second profession pretty easily. Once you unlock all of them on that character, you can change whenever you want, so don't stress it too much!

After you can get to either Lion's Arch (Prophecies), Kaineng City (Factions), or Kamadan (Nightfall), or if you just create a PVP only character, go to Great Temple of Balthazar (PVP char. start there, from the cities, open the world map (m key) and find the little boat not too far from the city you are in, click it and select Great Temple of Balthazar.)
Once there, hold down your ALT key and find this NPC: High Priest Zhang.
He will give you 50 Tournament reward points.
Now turn around, and look for a guy named Tolkano. Talk to him and turn those points in to Zaishen Keys. If I recall correctly, they are 5 reward points each, so you should be able to get 10 zaishen keys. These are worth about 5,500gp each maybe even up to 6kea now.
Now, your location says San Diego, so you should be in a relatively busy district. Click your trade tab in the chat window and type: WTS 10 zkeys for 5.5k/ea
(Or up up to 6k each if you are not in a hurry.)
Someone will whisper you or just open trade with you and pretty soon you should 55k in gold.
That's a good sum of money for a starting player in this game. Try not to spend it all on skills until you learn how they work a little better.

As said previously, it doesn't matter so much. First off, you can change it at will later on (though it'll take some time until you are at that point). Second, and perhaps even more important, your secondary is for flavor only. You could take Elementalist as secondary and be a Fireball-throwing Necromancer, but ultimately, if you want to throw Fireball around, you're better off creating an actual Elementalist.
That said, Monk is usually a really good secondary for Necromancer because it has access to a lot of resurrection spells. If you are using a hex-heavy build you might want to give Mesmer a look because it has some spells that synergize with hexes.

I like taking ritualist secondary (if in Cantha of course) for the spirits and restoration line. Monk is a good pick too for necros, giving you a hard rez and some heals which might help you until you have a full group. I often like taking a necro secondary to start me off on all other professions, due to lack of summon necros henchs.
I usually change my profession to something actually useful later on.
